Serves 2-3
Bake at 400 degrees, for 1 hour:
- 7 small to medium beets, washed and packed in WF paper sandwich bags or foil
To remove the skins, roll the beets on the counter top while keeping them in their paper bags, or use a large paper bag and shake! Cool in the fridge for 1 hour, or use warm.
Toss:
- 2 small boxed baby spinach
- 6 oz goat/sheep feta, crumbled
- cubed beets
- 1 julienned cucumber
- 1 handful dill, chopped
- 2 garlic cloves, minced
- juice of 2 lemons
I am a huge fan of eating my cooked veggies as part of salad. Not only are beets delicious but they also do wonders moving the bowels if you’re feeling.. stuck. Enjoy this hearty salad at night, and feel liberated the next morning

It could be tasty, but I would cut down on the amount of beets because that would be way too much tang!
